Sweet potato brownies (gf, v)
cooked sweet potato, mashed (or sweet potato puree)
almond butter (or any nut/seed butter of your choice)
pure maple syrup
unsweetened cocoa powder
dark chocolate chips (optional)
~ Preheat your oven to 350 and line an 8×8 inch brownie pan or baking dish with unbleached parchment paper.
~ Add the sweet potato, almond butter, maple syrup, and cocoa powder to a food processor or use a mixer to blend. Blend until the batter is smooth and the ingredients are well combined. The batter should be thick and fudgy.
~ Fold in the chocolate chips.
~ Transfer the brownie batter to the prepared baking dish and spread it evenly. Sprinkle the reserved chocolate chips on top if you set some aside.
~ Bake for 20-25 minutes, or until the edges start to pull away from the sides of the pan and a toothpick inserted into the center comes out mostly clean with a few moist crumbs.
~Allow the brownies to cool in the pan for at least 15 minutes before lifting them out.
~ Cut into squares and enjoy :)
